Pasta Salad with Roasted Red Pepper Sauce

Ingredients : 

Eight leaves of fresh basil
One clove of fresh garlic
Two small roasted red bell peppers (canned ok)
One package of penne pasta (16 ounces)
One large sliced sweet yellow onion
One tbsp olive oil
Two tbsp balsamic vinegar
Two tbsp mayonnaise

Instructions : 

1. Blend the basil, garlic, mayonnaise, vinegar, and peppers in a food processor.
2. As instructed by the package directions, cook the pasta. Then drain and rinse with cold water.
3. Over medium heat, warm the oil up in a frying pan.
4. Toss in the sliced onion and sauté until it caramelizes (turns soft and lightly brown).
5. In a big mixing bowl, combine the caramelized onions, pasta, and sauce
6. Pasta salad can be eaten immediately or stored in the refrigerator for up to three days.
Note: Since roasted pepper sauce is sweeter than tomato-based sauces, it has a lower potassium content.
